I am aware of the fact that you can pull both paddles back to put the gearbox in neutral, and can do that while the car is rolling. Can you then put it back in gear while still rolling? I dont have the guts to attempt that. And, if it can be done safely, does the gearbox determine which gear based upon speed? Thoughts?

Yes, and yes.

If you are stopped with it out of gear, however, you need to have your foot on the brake to get it to engage 1st gear
