I'm going to do a downloadable PDF of the whole process. Clarks is good, and there is an older PDF running around, complete with polaroid pictures, but figured a modern update can't hurt. In the meantime, I added it up and here are my totals to get the dash off (excluding aftermarket additions, etc.).

Nuts -- 3 (if you count the battery disconnect)
Hex Bolts -- 3
Phillips Screws --76
Electrical connectors --26
Tubes/ducts -- 3
Pull off knobs/sliders --5

Call me crazy, but I decided to have my original dash and center console redone in leather, rather than using the Classis 9 parts shown in post #6. The Classic 9 parts are perfect and look great, but after going to all the trouble of removing this stuff, I'd really like it to be in my preferred color -- all black with red stitching. The guy who did my seats does amazing work, so I dropped the parts off today and will start counting the days until I get them back. That means I will likely sell the classic 9 dash and center console to cover the costs of redoing the originals, if anyone is interested. The center console is in the same linen/sand color as the lower part of the dash. Looking forward to getting it all back together with a modern 'deviated stitching' look. :)
