I am starting to resurrect a trip that the apocalypse canceled. So I have questions.
From Seattle head east on Washington 20. Worth the effort? Are there gas and hotels along the route? Best times to drive this.

When the youtube car evals are driving in "the canyons" in California. Where is that?

There are a lot of canyons in California! Probably you’re envisioning Angels Crest Highway above LA.
You can find amazing roads anywhere in the state.

Regarding canyons in SoCal, google Azusa,

click the map, then pan out a bit until Azusa is on the upper right and La Canada/Flintridge is on the left, then look at the green and all those squiggly lines....lots of canyons there. I've spent a lot of time on the canyon roads north of Azusa as little traffic.
You could do the same with Maricopa Highway out of Wheeler Springs/Meiners Oaks in California (near Ojai).

Once I figure out where to start this trip next year, I plan on teleporting (ok, trucking) the Box to the left coast and driving back.

In a previous life I used to drive a lot of back roads in SoCal from Morro Bay to San Diego on various trips with 3 - 5 different cars. Once you get away from the coast, there are often nice drives inland to and through small towns to get to Interstate 5, the main north-south artery which tends to flow at a nice pace. There are all kinds of interesting two lane roads with minimal traffic and I like the dryer climate and open spaces of the west. I've driven PCH from Morro Bay to Monterey and it is great from a scenery perspective, but frustrating if you get stuck behind a motorhome, and just recently due to erosion:

That's a nasty slide down the long, steep slope to the rocky shoreline! I would guess that's usually a significantly weight-limited part of Highway 1.

I probably don't have many long road trips left in me, so I'm hoping to do something really epic, or stupid....
