2015 Cayman S - I recently got the amber caution to check the coolant level upon start up. Owners manual cautions to use approved coolant only but I cannot find what that might be. Does anybody have any recommendations? Also, the maintenance schedule does not appear to shown a flush of the coolant system should occur. When are other owners doing theirs?

well if it down just a tad , use distilled water. There is a lot of coolant in these cars , 6-8 oz of distilled H2O is fine. On the other hand if it is down a lot, figure out if there is an issue. How many miles and has it ever been serviced?
If you have to add a lot of coolant then get it from PORSCHE , they have specific requirements for their fluids, PH is one as well as stuff that does not interact with the metals .
Porsche recommends that the coolant protection is checked every 20K miles, if it shows less than adequate protection then a flush/ fill should be done

With that many miles and an aluminum block and heads I would definitely say you are due for a flush. Also keep in mind, before you get overly worried, hoses are often a culprit as they age and a small leak there, over time, can reduce fluids. Of course it means they made need changed also.

VW coolant is what I use. Buddy works at Porsche and says its identical.

I've used Zerex G40 most recently, but can't say for sure about your exact car. You can mix VW G11, G12, and G13. My car takes a Si-oat type coolant. There is nothing magical about Porsche or VW coolant - they buy it by the barrel from companies like Zerex and others that actually make coolant. If it is pink or orange you should be good-to-go. But if I were you, I'd check the owners manual for sure.
