The thickness would depend on how bent your tab is.
You could keep adding tape until the roof stops in the correct position, then put the sunroof on a flat surface and measure the tab top surface height, remove the tape, and bend the tab to the the same height.
Mine, unchanged since new, stops with a two inch opening from roof top to bottom of the sunroof.

Yes if I keep the switch pressed, it reaches its max height (determined by a switch in the trunk)
Getting tired of opening with two hands while driving

On my '88, the switch works fine... but the roof end--that metal tab that pushes on the switch--has sagged or something; it is barely touching when closed.
Clark's has a note that the tab can get bent while the roof is removed, and you can bend it back. I'd consider just adding a few layers of tape to achieve the same effect.

Hmmm... Post some pics showing what part we're talking about. If tape would fix it, I'm thinking any shim cover would need to be very thin?
