Tough comparison... unless u are at the top their of the AMG driving academy u don't get the opportunity to push them like you can your own car on track. Having ridden with an instructor in the GT, highly capable, much more raw than my GT3RS but I couldn't begin to compare handling, turn in etc as I've never driven them both on the same track at speed. I will say though that I feel more one with the RS in general when i sit inside and the PDK is just incredible.

I am still too cheap to take a newer Porsche to Road Atlanta. Any and all damage on a race track is on the owner's bank account with a regular insurance policy. You can buy track insurance but it's very expensive. A guy can get too aggressive down the hill in T-12 (the last turn). If they miss it, it throws them off the tire wall and in front of the cars behind going 100 Mph. Not good for anyone.
I remember a local pro-football player that destroyed a 991 GT3 on a track day. He just left it there and got a ride home. A $100,000 loss is nothing with a $90M contract. I actually did try to buy it on the copart auction.
Yeah, u have to be smart about it for sure. RA is one of the more dangerous tracks and last fall I saw a brand new 992 write it off in turn 12. If you are going out there for lap times and to push yourself to your limits vs just enjoying the car at 6/10ths... well its all relative. I have yet to see or hear of any car to car contact at CHIN or PCA. They normally limit groups to no more than 20 track dependent in any session. Frankly, it's the folks that drive around in a train that scares me.
Look up Opentrack. They're annual policy for folks that track a fair bit is rather reasonable all things considered... not cheap but with only a 5% deductible it's one of the better ones out there. Peace of mind. Day to day policies get very expensive very quickly.
Also I've found a dramatic difference between the DE events hosts. I can say without questions, PCA and CHIN are some of the safest all around, but it's up to each person to be smart and safe.
